Flavor: Dry, medium-full body, medium acidity, medium-high tannin, flavors of coffee, cherry, spice, oak, raspberry, plum; a long smooth finish.
Paring: Anything grilled, BBQ, and rich stews, spicy herbs like Rosemary, Sage, Thyme, or Oregano.. Basically anything hearty and meaty.
